Ingredients: 3-4 cups of broccoli florets (finely chopped); 3-4 cups of cauliflower (finely chopped); 1/2 cup of red onion (diced); 1/2 cup of green bell pepper (diced); 1/2 cup of red sweet pepper (diced); 1/2 cup of carrots (finely sliced and diced); 1/2 cup of sweet corn (I used canned); 10 slices of bacon (cooked, drained and chopped); 1 cup of colby jack cheese (shredded); Dressing:; 1/2 cup of mayonnaise (see notes); 1/2 cup of sour cream; 2.5 tablespoons of dry Ranch Mix

This Bacon Ranch Chopped Salad is loaded in delicious vegetables and topped with a creamy ranch dressing. Super versatile and great with any meal.

Bacon Ranch Chopped Salad

broccoli florets (finely chopped)

cauliflower (finely chopped)

red onion (diced)

green bell pepper (diced)

red sweet pepper (diced)

carrots

sweet corn (I used canned)

bacon

colby jack cheese (shredded)

Dressing:

mayonnaise (see notes)

sour cream

dry Ranch Mix

Combine all salad ingredients together in a large bowl. In a separate bowl combine dressing ingredients. Pour over salad and toss well.
