Step 1
Stir together oil, garlic, and thyme in a small bowl. Rub mixture all over pork. Sprinkle pork all over with salt and pepper. Wrap bacon slices, overlapping slightly, around pork; secure using wooden picks.
Step 2
Preheat air fryer to 400°F for 10 minutes. Lightly coat fry basket with cooking spray. Add pork to basket, and cook until bacon fat has rendered and a thermometer inserted into thickest portion of pork registers 145°F, 20 to 24 minutes, turning pork halfway through cook time.
Step 3
Transfer pork to a carving board, and let rest 10 minutes. Remove and discard wooden picks. Slice pork, and serve.
