Combine the liquid hickory smoke and BBQ sauce in a small bowl.Coarsely chop the onions & peppers.Cleaning the chicken: Remove as much fat as possible and the excess skin and clear slime under it, then place the chicken in a baking dishPreheat the oven to 350 degrees.Melt the butter in a microwave for a few seconds, then coat both side of the chicken with the butter and seasonings.Turn the chicken skin side down and coat with 1/2 cup of BBQ sauce, then flip them over and coat with another 1/2 cup of BBQ.Add in the chopped onions and peppers, then place the chicken in the oven. Bake for 2 hours, basing the chicken with it’s drippings and BBQ sauce every 30 minutes. You can place the chicken in the broiler on high for 3-4 minutes once it’s done to darken and stiffen the BBQ sauce but that’s totally optional.
