Preheat the oven to 400°F (207°C).
Step 2
Pat the fillets dry with paper towels and season them with salt and ground black pepper. Arrange the catfish fillets in a baking dish and follow with tomatoes, lemon slices, garlic, and thyme. Evenly drizzle olive oil on top.
Step 3
Bake the catfish fillets in the oven for 15 to 20 minutes, depending on the thickness of the fish. Garnish with freshly chopped parsley and serve immediately.
