Step 1

Preheat the oven to 180°C/350°F (fan forced).

Step 2

In a large baking tray place the cherry tomatoes (whole), garlic and whole block of feta placed in the centre of the tray (don't crumble or break the block). Toss in the olive oil and seasoning and place in the oven for 10 minutes.

Step 3

Combine the meatball ingredients together in a mixing bowl and form into golfball sized meatballs. Add to the tray of tomatoes/feta and cook for 20 more minutes.

Step 4

Meanwhile boil a large pot of salted water and cook your penne.

Step 5

Once your pasta and meatballs are cooked, throw the baby spinach or basil into the baking tray with the pasta and mix well to form a creamy sauce.

Step 6

Serve immediately with a big green salad.

Step 7

Re-heat in a pot over a low heat until just hot or in a low oven (covered).

Step 8

Store in an airtight container in the fridge.
