Baked Flounder with Parmesan Crumbs

flounder fillets (2 pounds total)

Salt and pepper

Parmesan cheese

bread crumbs

unsalted butter, melted

olive oil

We used frozen flounder from Costco and split the recipe in half. It turned out great! With half the recipe, we cooked it 6 min then on broil for 2min. It was perfect!

I cut in half for 2 pieces of fish. Added zest from half a lemon and broiled for the last 2-3 mins. Yum.

This is a top shelve recipe!!  There is absolutely no reason to rest this fish 5 minutes.  There is no redistribution of juices on something this thin.  All you get with resting is colder fish.

This recipe is absolutely awesome!!! No changes required was great even with frozen flounder. I was truly surprised how good it turned out. Thanks much.

I made this for my husband and two daughters and they just loved it so did I and this is what us women quick and simple.

With half a stick of butter, it's hard to call this recipe "healthy" - but boy was it yummy!  I had half a lemon in my fridge so I squeezed that in, and I threw in some dried parsley to give it color (I didn't notice any parsley taste).  DELISH.  

Also, I had thin fillets so I only cooked it 10 minutes, and that was perfect.  I would't have left it in that long except I figured it would take a minute or two for the glass baking dish to heat up.

So just put some cheese on a baked flounder. I can do that.

WOW! I still have my plate in front of me as I write this. This was some of the best baked fish I have ever had and certainly the easiest I've ever tried. The only thing I change was I used the Grated Parmesan that is in a shaker. I will be buying fresh Parmesan for my next meal. This wars great!

Delicious!! I added minced garlic and sqeezed lemon on top of each piece! I couldn't resist!

I'm sure it's delicious but how can you call it healthy when it has 1 1/2 tbsp of oil/butter per serving PLUS the fat in the parmesan. I will have to cut down on the fat.
