Step 1

Preheat oven to 425°F. Coat a large baking sheet pan with a thin layer of oil.

Step 2

Fill a medium saucepan halfway with hot water (from the tap), cover, and bring to a boil.

Step 3

Meanwhile, wash and dry the fresh produce.

Step 4

Preheat a large skillet over medium-high heat.

Step 5

Once the skillet is hot, add beef and spices. Cook, breaking it apart with a spoon, until browned and crumbly, 4-5 minutes. Remove from heat and let cool.

Step 6

While the beef is cooking, peel and quarter onion. Peel garlic.

Step 7

Trim jalapeño pepper.

Step 8

Once the water in the saucepan is boiling, add jalapeño, whole tomatoes, onion, and garlic to the pan. Cook until veggies are just fork-tender, 6-8 minutes.

Step 9

Meanwhile, juice half of a lime into a blender. Cut remaining lime into wedges and set aside for serving.

Step 10

Shave cilantro leaves off the stems; discard stems and add leaves to the blender along with additional oil and spices.

Step 11

When the veggies are done, drain and add to the blender. Blend on high until salsa is smooth, 1-2 minutes. Set aside.

Step 12

Fill tortillas with beef and cheese. Roll tightly and place, seam-side down, on the baking sheet, then drizzle with additional oil. Place in the oven and bake until golden and crispy, about 10 minutes. Remove from oven.

Step 13

Transfer flautas to a platter; serve with salsa for dipping and lime wedges for squeezing. Enjoy!
