Step 1
Preheat oven to 425° and spray a large baking sheet with nonstick spray or line with parchment paper.

Place the sweet potato slices into a bowl, then drizzle with olive oil, sprinkle with salt and pepper and stir to combine.
Step 3
Line the sweet potatoes onto your baking sheet in a single layer, ensuring they’re not overlapping. Drizzle any extra olive oil from the bowl over the potatoes.
Step 4
Bake the potatoes for 15 minutes, then remove them from the oven, flip them over and bake for an additional 12-15 minutes. Sprinkle with extra salt and enjoy!
