Step 1
Heat the olive oil in a skillet over medium heat. Add the garlic and cook 30 seconds until fragrant.

Season the chicken well with Italian seasoning, salt, and pepper. Add the chicken to the pan and cook for 4-5 minutes per side or until cooked through. Remove and set aside.
Step 3
Add the spinach and mushrooms. Cook until spinach is wilted and mushrooms are tender. Season with salt and pepper. Remove and set aside.
Step 4
Add the balsamic vinegar and chicken broth to the pan. Scrape up any browned bits from the pan.
Step 5
Add the tomatoes and cook until it reduced by half.
Step 6
Serve the sauce over the chicken thighs and vegetables.
