In a mason jar with a tight-fitting lid, or in a bowl, add olive oil, balsamic vinegar, mustard, honey (if using), and salt and pepper to taste (I like 1/2 teaspoon salt and 1/4 teaspoon pepper). Shake or whisk to combine. Store in the refrigerator for up to 4 days.
