Step 1
In a medium mixing bowl, combine caster sugar and sifted flour.
Step 2
Using your fingertips, rub 40g butter into your dry ingredients until thoroughly combined and mixture resembles fine breadcrumbs.
Step 3
Combine egg and milk into a glass or small bowl and whisk together with a fork until thoroughly combined (there are no egg streaks through the milk).
Step 4
Create a well in the centre of your mixing bowl, pour in your egg/milk mixture and mashed banana, and combine to form a soft batter. Set aside.
Step 5
Place brown sugar, water and 60g butter in a large saucepan (at least 20cm diameter). Stir occasionally over a medium heat until the sugar has dissolved, and the butter is melted. Bring syrup to the boil and immediately lower to a simmer.
Step 6
Using two dessert spoons, gently drop spoonfuls of batter into the simmering syrup. I would suggest a maximum of two dumplings at a time.
Step 7
Leave dumplings to simmer for 10 minutes, then flip them over and cook for another 10 minutes.
Step 8
Plate dumplings into a shallow bowl, spoon syrup over the top and serve hot.
