In a medium bowl, combine the chia seeds, milk, vanilla extract, and a pinch of salt.

Step 2

Stir well to ensure the chia seeds are evenly distributed.

Step 3

Cover the bowl and refrigerate for at least 4 hours, or preferably overnight, to allow the chia seeds to absorb the liquid and form a pudding-like consistency.

Step 4

When ready to serve, peel and slice the ripe banana.

Step 5

Divide the chia pudding into two servings.

Step 6

Top each serving with sliced banana and a tablespoon of peanut butter.

Step 7

Drizzle with maple syrup if desired.
