Place the pork, barbecue sauce, vinegar, and &frac14; cup water in a medium saucepan and simmer, covered, until fork-tender, 18 to 20 minutes.


Shred the meat and serve on buns with coleslaw, pickles, and potato chips.


I think she meant 1 piece of tenderloin at 1-1/4 lbs.  Most pork tenderloins are less than 2 lbs.


was wondering about the pork tenderloin being dry?  also size of tenderloin 11 1/4 lbs seems like a lot of meat for 4 people?  Or am I reading the weight wrong?


Pork tenderloin is not meant to be cooked as described above. As cooked, it'll end up like shoe leather. 

I used a shoulder pork roast, cooked in a crock pot for 8 hours on low. I also added, chopped onions and garlic. I used a cup of BBQ sauce and 2 Tbsp apple cider vinegar. The pork was tender and moist! Served with additional warm BBQ sauce. I will defiantly make this again.

I think dmmlmsu and jbutler323 are both correct. I found this to be on the dry side, both because of the lack of sauce and the lean cut. It was OK, just not great.

I have not tried this yet but was surprised to see Pork tenderloin used. It is such a lean cut. I have made this using a shoulder roast and it was great.
