Place a large non-stick skillet over medium-high heat. Add oil and allow to get hot.

Once hot, place chicken in pan and cook for at least 5 minutes to crisp prosciutto. Gently flip and continue to cook until internal temperature reaches at least 165ºF.

Transfer chicken to a serving plate, drizzle with any remaining pan juices, and garnish with lemon juice and parsley as needed.
