Step 1
Heat a large pan over medium heat and add 2 teaspoons olive oil and the onions. Cook for 2-3 minutes until onions are soft and then add in garlic. Cook for another 1-2 minutes.
Step 2
Add in the marinara sauce and all remaining ingredients, excluding the black beans. Stir until sauce is combined and let cook for 3-5 minutes to allow the flavors to develop. Next, add in the black beans, mix everything together and let cook another 2-3 minutes.
Step 3
Assemble your quesadillas. Lay your flour tortilla on a flat surface and add a couple spoonfuls of the bbq black beans to half of the tortilla. Spread them out with a spoon and then top with about 1/3 cup shredded cheese. Fold the other side of the tortilla over so you have a quesadilla.
Step 4
Heat a large pan over medium heat and add some oil or butter. Place your quesadillas in the hot pan and let cook for about 3-4 minutes on each side, until golden brown and cheese is completely melted. Let cool for a few minutes and enjoy.
