Step 1
Start by heating a large pan over medium heat and adding two teaspoons olive oil and the onions. Cook for 2-3 minutes until onions are soft and then add in garlic. Cook for another 1-2 minutes.
Step 2
Add in the marinara sauce and all remaining ingredients, excluding the black eyed peas. Stir until sauce is combined and let cook for 3-5 minutes to allow the flavors to develop.
Step 3
Next, add in the black eyed peas, mix everything together and let cook another 2-3 minutes. Cover until ready to eat. Enjoy as a side dish or in a bowl like I did.
Step 4
Make some cozy bowls if desired: To a single serve bowl, add a big spoonful of the BBQ black eyed peas, some kale salad or cooked veggies and then a couple pieces of cornbread or a spoonful of polenta or grits.
