Step 1

Place pine nuts in an oven bag and twist opening to secure. Cook on High/800watts/100%, gently shaking bag every minute, for 4-5 minutes or until golden.

Step 2

Wash beans and place in a freezer or storage bag (with water still clinging to them). Adjust beans until 2-3 deep when bag is laid flat, and twist opening to secure. Cook on High/800watts/100% for 3-3 1/2 minutes or until bright green.

Step 3

Meanwhile, whisk the lemon juice, oil, chives, parsley, salt and pepper together in a small jug.

Step 4

Carefully open bag of beans, allowing steam to escape. Drain and place in a serving bowl. Add pine nuts, pour over dressing and toss gently to combine.
