Step 1

To make the cheesecake mixture you will either need a stand mixer, hand mixer, or blander. First, mix the cream cheese and sugar together until it has a smooth texture. Next, add the eggs, egg yolk, heavy cream, vanilla extract, and vanilla pudding.

Step 2

Line the bottom of a 9 inch round springform baking pan and preheat the oven to 350 F° To make the dough for the crust, combine all the ingredients and mix with your hand mixer until well combined.

Step 3

Now press down 2/3 of the dough on the bottom of the baking pan and press the rest of the dough on to the sides of the baking pan, about 2 inch high. Make some holes on the bottom of the crust with a fork. Pour the cheesecake mixture into the baking pan and bake for 1 hour.

Step 4

To make the caramelized almond topping combine sugar, honey, butter, and cream in a small pot. Melt it on medium-high heat and add the almonds.

Step 5

Pour the almond topping mixture on the hot cheesecake and place it bake into the oven on broil until the almonds are golden brown. Let the Bee Sting Cheesecake cool completely and place it into the fridge. You should let the cake rest for 8 hours before consuming it.
