Step 1.Heat oil in a wok or large frying pan over medium heat. Add the garlic and ginger and stir-fry for 30 seconds until fragrant. Add the beef mince and stir-fry for about a minute. Add the broccoli and stir-fry until the beef is cooked and the broccoli is just tender. Add the oyster sauce, soy sauces and sugar. Stir-fry until well combined and the beef has soaked up most of the sauce. Turn the heat off and toss through the sesame oil.

Step 2.Divide noodles among serving bowls. Top with the beef mixture. Sprinkle with spring onion, sesame seeds and spoon over the chilli oil, if using.
