Step 1

Preheat oven to 375°F (190°C).

Step 2

In a skillet, cook the ground beef and diced onions over medium heat until beef is browned and onions are translucent. Drain excess fat.

Step 3

Warm the tortillas in a skillet for about 10 seconds each side.

Step 4

Spread a little enchilada sauce at the bottom of a baking dish.

Step 5

Take a tortilla, place some beef mixture in the center, sprinkle with cheese, and roll it up. Place seam side down in the baking dish.

Step 6

Repeat with the remaining tortillas.

Step 7

Pour the remaining enchilada sauce over the rolled tortillas and sprinkle the rest of the cheese on top.

Step 8

Bake for 20-25 minutes until the cheese is bubbly and golden.

Step 9

Serve hot with preferred garnishes.
