Ingredients: 1 (3 ounce) package cream cheese, softened; 2 tablespoons mayonnaise; 2 tablespoons finely grated onion; 2 tablespoons finely grated peeled and seeded cucumber; 1 drop green food coloring

A simple Derby Day appetizer dip my aunt, who lived in Louisville, gave to my mother over 50 years ago. Serve with crackers or chips.

Benedictine Dip

(3 ounce) package cream cheese, softened

mayonnaise

onion

cucumber

green food coloring

Mix cream cheese, mayonnaise, onion, cucumber, and food coloring together in a bowl until well blended and food coloring is incorporated. Cover and chill, 8 hours to overnight. Serve.


I took this dip to a neighborhood party tonight and it was a huge hit!  So simple with rave reviews!  I adjusted the serving size to 16 to use an 8 oz brick of cream cheese.   Thanks for sharing this recipe!
