In a medium-sized bowl, beat the eggs until smooth. Add the buttermilk, vanilla extract, ground cinnamon, and nutmeg, and whisk it until well combined. This will be your dipping mixture for the bread.

Dip each slice of bread into the buttermilk mixture, ensuring to coat both sides evenly.

Heat a non-stick skillet or griddle over medium heat. Once hot, add the soaked bread slices to the pan. Cook them until golden brown, approximately 4 to 5 minutes for each side.

Combine the white sugar, water, and brown sugar in a small saucepan over medium heat. Stir until the sugars are fully dissolved, boil, and cook for 1 minute. Remove the saucepan from the heat, and stir in the maple-flavored extract and vanilla extract.
