Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan or line it with parchment paper.In a blender, food processor, or large mixing bowl with an immersion blender, combine the wet ingredients, including ripe bananas, cottage cheese, cane sugar, oil, and vanilla extract. Blend until smooth and well combined. If using a blender, pour the mixture into a large bowl and add the eggs. With a hand mixer, or whisk, mix until well combined.Add the dry ingredients, including oat flour, almond flour, baking powder, cinnamon, and salt. Mix until just combined. Be careful not to overmix.Fold in the mini chocolate chips, reserving some for topping the bread if desired.

Pour the batter into the greased loaf pan and smooth the top with a spatula. Sprinkle the remaining chocolate chips on top, if using.Bake in the preheated oven for 45-55 minutes, or until a toothpick inserted into the center comes out clean.Remove the bread from the oven and let it cool in the pan for 10-15 minutes.
