Step 1

Cook the tapioca pearls according to the package instructions.

Step 2

Drain immediately. To prevent them from sticking together, either rinse under cold water, place in a bowl of cold water, or transfer them to the brown sugar syrup.

Step 3

Whilst the boba cooks, prepare the brown sugar syrup by heating the water and brown sugar in a small saucepan over medium-high heat. Stir occasionally until the sugar has dissolved.

Step 4

Simmer for 3-5 minutes to slightly reduce and thicken the mixture. Remove from the heat and add the cooked boba balls, stirring well.

Step 5

To infuse the boba with more flavor, allow them to soak in the syrup for 40-60 minutes.

Step 6

If you want to enjoy this as iced tea, you may want to steep the tea before any of the above steps. That way, it has time to cool.

Step 7

On the stovetop, heat the water for the milk tea to 176ºF. Don’t let the water boil as it will make the tea taste bitter.

Step 8

Using an infuser, steep the tea leaves or bag in the hot water for 5 minutes. Remove the tea, add the taro powder, and mix well. Then set it aside to cool.

Step 9

To assemble the tea, first add the boba and syrup mixture to 2 tall glasses. Add ice if using, then pour in the tea. Top up each glass with milk.
