Step 1
Preheat oven to 170°C. Grease and line a lamington tin (15 x 25 cm) with baking paper and set aside.
Step 2
Place sugar, butter, eggs, banana and vanilla into mixing bowl and mix 50 sec/speed 4.
Step 3
Add all remaining cake ingredients and mix 20 sec/speed 4 or until just combined. Pour into prepared tin and bake for 35 minutes (170°C) or until a wooden skewer inserted into the centre of the cake comes out clean. Set aside to cool in tin for 5 minutes then transfer to a wire rack to cool completely. Clean and dry mixing bowl.
Step 4
Place all icing ingredients into mixing bowl and mix 50 sec/speed 5. Spread icing onto cooled cake and slice before serving.
