Ingredients: 2 quarts vegetable stock; 1 turkey carcass; 1 (10-ounce) box frozen mixed vegetables; 1/2 cup rice; 2 cups cooked turkey, cubed; 1 teaspoon Old Bay seasoning; 2 teaspoons dried thyme; Salt and pepper, to taste

Salt and pepper,

Combine the vegetable stock and the turkey carcass in a large soup pot over low heat and bring to a simmer. Cover and simmer for 1 hour.

Add the remaining ingredients to the stock. Cover and simmer for an additional 20 minutes.

I enjoy Alton Brown's recipes.  They are well thought out and not complicated.  This one is no exception.  I had already cooked the turkey carcass and removed sufficient meat to go into a soup.

For Thanksgiving dinner I made a wild rice and butternut squash dish and so I just added this to the soup mix along with the mixed vegetables.  I used a 1/2 tsp. of crab boil seasoning just because I find it a bit overpowering.  The soup is delicious and made so much that I ended up giving some away to the neighbors and an extra quart for the freezer!

Really good, so easy!  I didn't have any frozen vegetables or canned, oopsie. But I put in some roasted butternut squash cubes.  very good, maybe a tad salty, i did use only 1 tsp thyme to start and didn't need more.  A squeeze of lemon seems like it would have been welcome.

This is very good.  Like the other reviewers, I removed the bones before adding the other ingredients.  I also only added on tsp of thyme.  This is definitely one of our after turkey day meals!

Great soup! I remove the bones before I add the rice. When I did not, I had a terrible time separating small bones from the rice. 

I add a bit of poultry seasoning it really makes it pop!

Nice starter recipe for turkey soup.  Especially useful for those unfamiliar with making their soup from a carcass. With experience, it's a great recipe to modify and build on.  Interestingly, in the video Alton does strain the bones out of the broth before adding the other ingredients like the rice and vegetables. 

Made this recipe last year with a Green Egg smoked turkey - it was absolutely FABULOUS!!!!  Tonight I plan to make it with a two smoke ham-bones - you can't go wrong!  As I always say . . . "Alton Brown Will Never Let You Down"!
