Step 1
Preheat oven to 350F. Spray a 9x13-inch pan with oil. Set aside.

In a large skillet over medium-high heat, cook sausage, breaking it up, until completely cooked through. Use a slotted spoon to remove to a paper-towel lined plate. Leave any fat in the skillet.
Step 3
Lower the heat to medium and melt butter to the same skillet (with the fat if using pork sausage). Once melted, whisk in flour, salt, and pepper. Let cook for about 2 minutes.
Step 4
Slowly pour in milk, whisking the entire time. Bring to a simmer and let cook until thickened, about 5 minutes.
Step 5
Pour sausage gravy into the prepared pan.
Step 6
Cut each biscuit into quarters and arrange the quartered biscuits on top of the gravy.
Step 7
Bake 25 - 30 minutes until casserole is bubbly and biscuits and a deep golden brown.
