Step 1
Add all of the ingredients for the “Bean Filling” to a high-powered blender and process. The mixture should be thick and not too runny.Note: If the mixture is too thick and the blender will not process it, simply add 2 teaspoons of water until the blender can process it.Set aside in a container.
Step 2
To one side of a tortilla, add two tablespoons of mozzarella, about three tablespoons of the bean mix, and two more tablespoons of mozzarella.Fold the “clean” side of the tortilla over to close it. It should look like a half-moon. Repeat for remaining quesadillas.
Step 3
Set a nonstick skillet on medium-high heat, and once hot, spray with avocado oil. Add the quesadilla and toast on one side until golden brown and crispy, about 3 to 4 minutes on each side.
Step 4
Slice or eat it whole while hot! Enjoy with salsa or even mashed avocado (or guacamole).Note: If you are making this for meal prep, consider enjoying these as a cold lunch! When reheated, the tortilla may get a bit soggy. If that is a concern for you, then I would eat them cold, just like pizza.Enjoy!
