Step 1
Generously salt fish, place in plastic container and refrigerate overnight.
Step 2
Mix kasuzuke, sake, mirin add water as needed to make a paste.
Step 3
Coat the fish with marinade mixture, cover and refrigerate for 3 additional days (or may be frozen at this point).
Step 4
Scrape off marinade and broil both sides until nicely browned (approximately 4-5 minutes each side).
Step 5
Save marinade to use again.
