Step 1

Brush fish with butter, season and dust with Cajun spice mix. Set aside for 30 minutes to marinate.

Step 2

Preheat the oven to 220C, drizzle chips with 1/4 cup (60ml) oil, sprinkle with sugar and season with salt. Place on a rack set above a baking tray and bake, turning halfway, for 25 minutes or until crisp.

Step 3

Meanwhile, heat remaining 1 tbs oil in a frypan over medium-high heat. Cook fish, turning, for 6-8 minutes until cooked. Serve fish with chips, aioli, coriander and lemon wedges on the side.
