Step 1
Preheating the griddle properly takes time! Give it at least 15 minutes over medium heat to come up to temp over the entire surface before you start cooking.

Less is more on the heat side of things! Cook over low temperatures when you are starting out. If the LOW setting is still too high, turn off one of the burners and cook on the edges of the burners that are fired.
