Step 1
Chop the apples into small half-inch pieces, skin on.
Step 2
Add the apple pieces, lemon juice, cinnamon and water to a small saucepan. Cook over medium-low heat, stirring frequently until the apple pieces are tender and water has mostly evaporated (about 5 minutes). Add an extra splash of water if it becomes too dry while cooking. Remove from heat.
Step 3
Add all the ingredients for the bircher blended oats to a blender. Blitz until a mostly smooth, batter-like consistency forms.
Step 4
Divide the stewed cinnamon apple between four individual jars or containers. Pour the blended oats mixture over the top.
Step 5
Seal and transfer the containers to the fridge to set overnight, or for at least 90 minutes. The oats will keep for up to 4 days.
Step 6
When you're ready to eat, add extra toppings like yogurt, coconut flakes and seeds, if desired.
