Step 1

Place 500 g water into mixing bowl and start Kettle /100°C.

Step 2

Add 80 g tapioca pearls and cook time indicated on package/100°C/speed  or until soft and transparent (cooking time will vary depending on the size of the pearls - see Tips). Using simmering basket, strain pearls, then transfer into a bowl of iced water and set aside to cool (this makes them bouncy). Clean and dry mixing bowl.

To guarantee the success of recipes using Sugar mode, the ingredients used must match exactly the quantity and description given. The recipe should also be cooked immediately after placing ingredients in the mixing bowl.

Step 4

Place sugar, 30 g water and lemon juice then start Sugar Stages .

Step 5

Add 60 g water and mix 2 min/speed 2. Pour immediately into a heat-resistant glass jar.

Step 6

Place remaining 1000 g water and vinegar in mixing bowl then start Pre-clean /Fat or caramel.

Step 7

Grease and line a springform cake tin (20 cm) with baking paper and set aside.

Step 8

Place butter into mixing bowl and melt 2 min/60°C/speed 1, without measuring cup.

Step 9

Add biscuits and sugar, then mill 2 sec/speed 7 or until fine crumbs. Evenly press mixture into base of prepared cake tin and place in the fridge to set until needed. Clean and dry mixing bowl.

Step 10

Preheat oven to 220°C.

Step 11

Place cream cheese, cream, sugar and natural vanilla extract into mixing bowl then mix 20 sec/speed 4.

Step 12

Add eggs and mix 20 sec/speed 4. Place 2 tablespoons of drained boba onto crumb base, then pour cheesecake filling over. Bake cheesecake on the lowest shelf of the oven for 10 minutes (220°C). Reduce temperature to 150°C and bake for a further 45-50 minutes or until mixture is almost set.

Step 13

Allow cheesecake to cool for one hour in turned-off oven with door ajar. Allow to cool to room temperature, then cover and place in refrigerator for 4 hours. Once cheesecake is set, remove from mould and place on a cake plate. Drain remaining boba and add to reserved caramel syrup, mix well to combine, then pour over cheesecake. Cut cheesecake in slices to serve.
