Ingredients: 1 3/4 pounds red boiling potatoes; Kosher salt; 3 tablespoons butter, melted; 1 tablespoon freshly chopped parsley leaves

Boiled red potatoes have been drizzled with melted butter and sprinkled with chopped parsley leaves.

Put the potatoes in a medium saucepan and cover with cold water by 2 inches. Salt the water generously. Bring to a boil over medium heat and cook the potatoes until tender, about 15 minutes. Drain and put the potatoes in a serving bowl. Drizzle with melted butter and sprinkle with parsley. Toss and serve.

Add Shrimp and Crab Boil to the water. A cajun delight. The potatoes soak up the spicy boil and give the a fantastic twist. 

Very good potatoes and easy to make. I will make these again.

I totally forgot about what my mother called 'parsley buttered potatoes'. Thanks for the reminder, and the twist of using red potatoes. Sometimes I think I should be doing 'complicated', but this is a simple, tasty go-to recipe.

Easy and delicious.  They had a yummy, creamy texture.

 Two words: Easy and Fabulous!!!  I also added a little garlic salt as one of the reviews stated because I love garlic. Will definitely be making these again soon.
