Step 1
Preheat oven to 400F.
Step 2
Wash and dry beets and remove any greens.
Step 3
Coat the outside of each beet with a little bit of olive/avocado/coconut oil. Sprinkle with about 1/8 teaspoon of salt.
Step 4
Place on a parchment-lined baking sheet and roast for about 50 minutes, or until a fork can be inserted into the beets easily.
Step 5
Allow cooked beets to cool. With a knife, cut off both ends and remove the peel. Chop up one beet and place any extras in a sealed container in the refrigerator for other recipes (salads, smoothies, baked goods, oatmeal, etc.).
Step 6
Place all of the ingredients (including the cooked beet) into a food processor. Pulse and then let run until the mixture sticks together when pressed between fingers.
Step 7
Shape into desired size balls (about 20). Roll balls in additional shredded coconut, if desired and enjoy!
Step 8
Store beet bites in the refrigerator for up to 5 days.
