Preheat oven to 350 degrees.
Step 2
Spray muffin tin with non-stick baking spray.
Step 3
Cook broccoli.
Step 4
Combine broccoli, cheese, 10 Ritz crackers, and egg in a food processor until everything is well combined.
Step 5
Spoon mixture into muffin tin until about 3/4 full.
Step 6
Sprinkle with Ritz crackers.
Step 7
Bake at 350 degrees for 12-15 minutes or until crackers are slightly browned on top and mixture is fully cooked.
Step 8
Serve hot or at room temperature.
