Step 1
In a large stockpot combine water, sugar, and honey. Simmer on medium-low until sugar dissolves, stirring often. Add spices and lemon slices and then lower the pears into the liquid.
Step 2
Simmer on low for 35-45 minutes with lid partially ajar to vent steam. Periodically push pears down into the liquid to ensure even cooking. Pears will be very fork tender when done. Remove from heat and set aside.
Step 3
Allow pears to cool in the liquid for 3 hours. Once cooled remove the pears to a plate and then bring the liquid to a simmer. Cook until reduced to a thicker syrup, about 10 minutes.
Step 4
Strain liquid and allow to cool. Place pears on serving dish and pour the spiced syrup over top.
