Step 1

Place a bowl onto mixing bowl lid and weigh speck into it. Set aside.

Step 2

Place onion and leek into mixing bowl and chop 3 sec/speed 7. Scrape down sides of mixing bowl with spatula.

Step 3

Add butter and sauté 2 min/120°C/speed 2.

Step 4

Add potatoes, parsley, water, stock paste, nutmeg and pepper and cook 20 min/120°C/speed 2 or until potatoes are cooked. Meanwhile, place a frying pan over medium-high heat and fry speck until crisp. Transfer onto a plate lined with paper towel and set aside to drain.

Step 5

Blend soup 40 sec/speed 4-9, increasing speed gradually from speed 4 to speed 9.

Step 6

Add cabbage and cook 2 min/120°C//speed 1.

Step 7

Divide soup between bowls and top with speck to serve.
