1/2/18 - We all enjoyed these but patties need to be THIN to cook through. Also, use the slightest bit of olive oil on Silpat or parchment to prevent sticking. Chop onions, bell pepper and garlic in advance if possible as this makes the final prep easier. Recipe doesn't include flax egg, but I'd like to try that and see if it helps. Make beans, rice and sweet potatoes in advance. Finely chop garlic, bell pepper, onion & carrot, then saute. Heat oven to 415F. While that's cooking, mix beans (1/2 mashed), rice, mashed sweet potatoes, cilantro, nutritional yeast, chili powder, cumin, paprika and chipotle powder in a bowl. Then, add sauteed garlic, bell pepper, onion & carrot. Form into thin patties and place on lightly oiled Silpat or parchment. Bake for 30 minutes, then flip and bake another 20 minutes.
