Heat 1 tbsp olive oil in a large pot over medium-high heat.

Add the onion and garlic and cook for 2 minutes or until tender.

Next, add the chopped celery, carrots, salt, and pepper and cook for about 5 minutes, stirring occasionally.

Add the chopped cabbage, diced tomatoes, vegetable broth, oregano, and basil, and stir using a wooden spoon until everything is well combined.

Bring everything to a boil, then reduce the heat to low and let the soup simmer for 15-20 minutes until the cabbage and all the vegetables are tender.

Turn off the heat, garnish with fresh parsley or dill, and enjoy.
