Step 1
Bring a large pot of water to a rolling boil. Once boiling add a handful of kosher salt.
Step 2
In a large mixing bowl, combine the parmesan, Colavita Olive Oil, tarragon and pepper. Mix to form a paste.
Step 3
Add the Colavita gnocchi to the boiling water. When the gnocchi are done, they will float to the top of the water. Skim them off and place them into a colander.
Step 4
Add all the cooked gnocchi to the mixing bowl with the herb mixture.
Step 5
Using a large spoon, mix the gnocchi with the paste well so that every gnocchi is coated.
Step 6
Serve with extra parmesan if desired!
