Step 1
Cut the chicken breasts into small bite sized pieces. In a big bowl add the cubed pieces of chicken. Add the lemon juice, oil and all the seasonings. Mix the chicken up well so its all evenly coated.
Step 2
You can cook the chicken in the oven or on the stove in a large fry pan. Both methods are great. If cooking in the oven, preheat the oven to 375, cook for about 18 minutes or until it's fully cooked through. If cooking on the stove, add to a heated skilled and cook on medium heave for about 14-18 minutes.
Step 3
While the chicken is cooking or baking, chop your veggies and mix up the sauce ingredients (yogurt, sriracha, cilantro, a pinch of salt and pepper). I like to also heat my wraps or tortillas a bit before making them.
Step 4
Assemble your warmed wrap or tortilla. Add chicken, lettuce, veggies and sauce, fold the bottom up and then wrap the sides together. Enjoy! Store leftovers in an airtight container keep in the fridge for up to 4 days or freeze them in plastic wrap for up to 2 months (just leave off the romaine.)
