Step 1
Cut each orange into 4 vertical segments, use your thumb to separate the peel form the orange.
Step 2
Remove peel including the pith.
Step 3
Use a spoon to scrape away the remaining pith. NOTE: THIS IS THE MOST IMPORTANT STEP.
Step 4
Cut into strips.
Step 5
Place orange strips in a pot of boiling water, boil 15 minutes.
Step 6
Drain, rinse, drain again.
Step 7
In the same pot, bring 3 cups water and 3 cups of sugar to a boil, stirring until sugar is dissolved.
Step 8
Add orange peel—return to a boil.
Step 9
Simmer until peel is very soft (about 40-45 minutes), drain.
Step 10
Toss in remaining 1 cup sugar, separate on a cookie sheet lined with parchment paper and dry (about 24 hours).
Step 11
Use immediately or Store in an air tight container up to a month in the refrigerator or in the freezer up to 3 months.
