Step 1
Heat oil in a large skillet on medium-high.
Step 2
Season chicken with salt and pepper then cook approximately 6 minutes per side. Remove from skillet and set aside.

Stir in vinegar to deglaze pan.
Step 4
Add garlic and cook 1 minute, stirring constantly.
Step 5
Add tomatoes and cook 5 minutes or until softened. Stir occasionally.
Step 6
Sprinkle in basil and stir to combine. Return chicken to pan and gently turn to coat both sides with sauce.
Step 7
Top each chicken breast with mozzarella and cover pan.
Step 8
Once cheese has melted, remove chicken from pan, top with tomatoes and serve.
