Step 1
To make the pesto dressing, place the basil, parmesan, pine nuts and garlic in a food processor. Process, scraping down sides, until finely chopped. With the motor running, add oil in a thin steady stream until well combined.
Step 2
Use a 5cm star pastry cutter to cut a star out of the capsicum. Cut a 6cm rectangle out of the remaining capsicum to create a base for the tree.
Step 3
Arrange the lettuce leaves on a serving platter in a tree shape. Place the capsicum star at the top, and rectangle at the base.
Step 4
Combine 60ml (1/4 cup) basil pesto dressing with 11/2 tbsp olive oil in a bowl. Drizzle over the lettuce leaves. Dollop with half the remaining pesto dressing. Scatter the bocconcini and tomatoes over the leaves. Drizzle with remaining pesto dressing and a little extra oil to serve.
