Step 1

Cut the plums in half and remove the seeds. Slice each plum into 8 wedges.

Step 2

Cut tomatoes into various shapes – slices, halved, and wedges.

Step 3

Combine plums and tomatoes in a bowl and add balsamic vinegar. Toss to combine and allow to marinate for 5 minutes.

Step 4

Prepare your mozzarella or bocconcini by tearing into bite-sized chunks. Add the mozzarella and basil leaves to the tomatoes and plums, and toss to combine. Season well with sea salt and black pepper and drizzle generously with extra virgin olive oil.

Step 5

Serve immediately.
