Pick up a rotisserie chicken and assemble this hearty sandwich for a quick and easy weeknight meal.

Caprese Wraps with Chicken

olive oil

white wine vinegar

salt

black pepper

prechopped hearts of romaine lettuce

skinless, boneless rotisserie chicken breast

(3 ounces) fresh mozzarella cheese, chopped

basil leaves, torn

cherry tomatoes, quartered

Cooking spray

(2.8-ounce) multigrain flatbreads (such as Flatout)

garlic clove,

Combine first 4 ingredients in a large bowl, stirring with a whisk. Add lettuce and next 4 ingredients (through tomatoes), tossing to coat.


Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Working with 1 flatbread at a time, cook bread 1 minute on each side or until toasted. Rub 1 side of each flatbread with cut sides of garlic. Arrange 1 1/2 cups chicken mixture in the center of each flatbread; roll up.


Balsamic  vinegar with EVOO is more caprese style. I chop the garlic and added it to the dressing. Also used thinly sliced red onion for some kick. For two people, save one half of the dressing in the fridge to use the next night. Flatbreads  work better than the round wraps that I tried.

Very refreshing for dinner on a hot night.  After reading the other reviews, I opted to use just balsamic vinegar.  I also minced the garlic and added it to the dressing instead of rubbing it on the flatbread.  We did have the leftovers for lunch the next day but this wasn't as good as the lettuce was pretty soggy.  Next time, I'll keep the dressing separate and use it on a per-serving basis.  Will definitely make again!

I ended up with a salad b/c I over cooked my flat bread; it crumbled when I tried to roll it, so all it went into a bowl and it did make a pretty good salad!

So happy I tried this.  I made a variation with what I had on hand. I cooked a chicken fillet with a drizzle of balsamic vinegar before finely chopping it instead of using rotisserie.  I used a half of a whole wheat pita &amp; finely chopped a little piece of string cheese for the mozzarella.  I used Balsamic vinegar instead of white wine.  I was worried because I modified so much!  Surprisingly, it was outstanding.  About half the mixture fit into my pocket sandwich &amp; I ate the rest as a side salad. Yum. Making it again for lunch this week.

I thought this was great. Classic flavor combination, and it was really easy.

I added diced red onions and red peppers and a tbsp of balsamic vinegar.  I also used almost the entire rotisserie chicken (so was more chicken heavy).  Very refreshing and summery!  Also would be good, I think, with diced cucumbers.

I used all of the chicken from a rotisserie chicken (about 3 cups).  Mixed with 4 tablespoons of olive oil and 4 tablespoons of balsamic vinegar (instead of the white wine vinegar).  Really quick to put together (besides shredding the chicken) and good for lunch the next day.  I served with sweet potato fries.
I could have gone for some flavor, but not sure what to add to achieve that.

this is such a fresh &amp; tastey lunch!!  surprisingly filling yet light!!  i doubled the pepper &amp; garlic...and used 1 tblsp wine vinegar &amp; 1 tblsp balsamic....YUMMY!

Amazing.  I used a high quality novello olive oil from Wegmans, balsamic vinegar, 7 oz of roasted tomatoes and baked and shredded my own chicken breast, (8 oz was perfect).  I would definitely make this again, in fact, I can't wait to have the leftovers for lunch!

Simple and good for a quick, hot night.  Used balsamic vinegar for a little more flavor.  Served with raw snap peas and carrots - great for a Friday night

This makes a great, quick, delicious, and healthy dinner.  Perfect for a summer evening.  Even better when you increase the dressing.

After reading the reviews, I threw the ingredients together and added extra balsalmic vinegar, pepper, garlic  and salt. My husband and his buddy really enjoyed it.The recipe was quick, easy and inexpensive. Would make it again.

I liked this recipe but totally agree that the balsamic vinegar is a better choice.  I made it last night with the white vinegar and again today with the balsamic vinegar and it was much better with the balsamic.  It's a great recipe for leftover chicken or pork.  I really liked the whole wheat wraps and will use them again.  Tip* The ingredients should be spooned onto the wrap with a slotted spoon since the extra liquid makes the wrap somewhat soggy.  All in all, this is a great starting point for a sandwich that's a little bit different than the usual.

This was really boring. I love Caprese salad so I thought I might like this but it was very plain. I definitely think it would have been better with balsamic vinegar or maybe just more vinegar.  I might even be tempted to add Dijon mustard to the dressing to add some flavor.  Or, maybe just more salt? I don't know - it has great ingredients but it was definitely lacking a lot of something.

I love caprese salad so I was disappointed when this was not as good as I had hoped it would be.  The flavor is just very bland.  We ended up passing around bottled Italian salad dressing just to give it a little flavor.  Maybe balsalmic vinegar would be a better choice than the white wine vinegar.  It is quick and easy but I won't be making this again.

Loved the filling but that flatbread was hard to use. The filling kept falling out or the bread kept tearing.
