Step 1
Combine sugar and water in a small saucepan over medium heat until it dissolves, about 3 to 4 minutes. Do not let it boil.

Once completely dissolved, increase heat to medium-high and cover. Let boil for 2 to 3 minutes.
Step 3
Uncover and stir slowly until the color resembles light honey, about 6 minutes.
Step 4
Remove from heat. Very carefully add hot water. The mixture may spurt when adding water, so stand back.
Step 5
Once the bubbling slows, add vanilla and stir slowly to combine.
Step 6
Let cool completely before using. Store syrup in an airtight container for up to two weeks.
