Thread pineapple onto skewers. Set aside.

In a small saucepan, bring to the boil sugar, water and chilli. Bubble until liquid reduces and thickens slightly. Add the coriander and mint.

Brush skewers with the syrup and grill on barbecue until caramelised. Remove from the barbecue and pour over remaining syrup.
Step 4
Scatter over peanuts. Squeeze the juice of one lime over the top.
