Preheat oven to 425°F. Using a serrated knife, diagonally slice the bread. Arrange bread slices on two large baking sheets. If desired, brush each slice lightly with olive oil. Bake for 8 to 10 minutes or until light brown, turning slices over once halfway through baking.

Step 2

In a large skillet melt the butter over medium-low heat. Add onions; cover and cook for 12 to 14 minutes or until tender, stirring occasionally. Uncover; cook and stir for 3 to 5 minutes more or until golden brown. Spoon onion mixture over toasts. Sprinkle with cheese. Sprinkle with salt and pepper.
